Growing up in the 50's Brisket was regular on the Sunday Dinner table. for whatever reason in later life brisket seemed to dissapear. Much later (last 20) years it made a comeback. It has been a regular in our house since. You can imagin we had tried many different butchers over the years. I can say without doubt, the 32 day dry aged grass fed Beef Brisket, is just the best we have tasted. Nicely marbled with just the right amount of fat, it cooked (3 hrs) perfectly. The best Brisket. Just have to try the Pichana next.

Smoked the 3.5kg 32 day aged brisket in the water smoker for 10 hours between 250f and 275f and it came out absolutely tender and juicy. Smoked it with hickory for an intense smoky flavour. Would buy again.
